Preparing and cooking food in a logical order is a skill that is necessary to complete a set of tasks within a required timeframe. In the Hospitality industry this is known as 'workflow'. This topic will give you a basic understanding of how and why 'workflow' is important.

Lack of preparation can mean:
- delays in serving customers
- wasting time or food
- food being contaminated
Look at the menu for the restaurant.

- equipment
- who will do what
We need to:
- be organised
- talk to our co-workers
- be aware of time limits

Time management is the effective and efficient use of time. Mise en place is an important part of time management; if tasks are not completed food service will be affected.
In a commercial kitchen or a bar it is important to prioritise your tasks to complete in the required timeframe. This can be done through a workflow plan.
A workflow plan determines the order in which tasks are carried out to make the work flow.
Workers are given set tasks to be completed within a timeframe. For example, preparation in a bar means that drinks will need to be cold and drink garnishes prepared before the bar opens.
